  • 2 tsp coriander 1 tsp if preground
  • 1 tsp cumin 3/4 tsp if preground
  • 1/2 tsp fenugreek
  • 1 tsp black peppercorns
  • 2 allspice berries 1/8 tsp if preground
  • 2 black cardamom pods just the seeds
  • 4 cloves
  • 5 dried chilies deseeded
  • 3 tbsp sweet paprika
  • 1 tsp salt
  • 1/4 tsp nutmeg
  • 1/2 tsp ground ginger
  • 1/4 tsp cinnamon
  • 1 tsp turmeric
  1. Toast the whole spices (coriander, cumin, fenugreek, black pepper, allspice, cardamom, cloves) and the chilies over high heat until fragrant. Allow to cool.
  2. Grind the whole spices into a fine powder. Add the preground spices and blitz a few more times to combine.
