- Dice the onions and toast the whole spices (cinnamon, pepper, cardamom, cloves, fennugreek, coriander, cumin) over high heat until fragrant.
- Turn down the heat to low. Add the butter, onions, garlic, ginger and the rest of the spices (oreganom nutmeg, turmeric, besobela, kosseret). Let the butter melt and combine everything.
- Bring to a very light simmer and let simmer for 1 to 1 1/2 hours.
- Strain/Filter into an airproof container, allow to cool and refrigerate.
