- Soak the noodles in cold water and the shiitake mushrooms in warm water for 1 hour.
- Julienne the carrot and bell pepper and thinly slice the onion and mushrooms.
- In two separate small bowls, mix together the shiitake marinade and the noodle marinade.
- Squeeze out the soaked shiitake mushrooms and add them to the shiitake marinade. Add the mushrooms to a small bowl and add 1 tbsp of the noodle marinade. Let marinade until needed.
- Cook the noodles according to the package instructions, about 10-15 minutes. Rinse under cold water, cut into 15-20cm long pieces and mix with the noodle marinade.
- Preheat a pan with a bit of oil on low-medium heat. Add the onions and a pinch of salt, cook for 1-2 minutes and add to a large mixing bowl.
- Set heat to medium. Add the carrots and a pinch of salt, cook for 1-2 minutes and add to the bowl.
- Set heat to medium-low. Add the bell pepper and a pinch of salt, cook for 1-2 minutes and add to the bowl.
- Add the marinated mushrooms, cook for 1-2 minutes and add to the bowl.
- Set the heat to medium. Add the marinated shiitake mushrooms, cook for 2-3 minutes and add to the bowl.
- Set the heat to medium-low. Add the marinated noodles, cook for 2-3 minutes and add to the bowl.
- Add the sesame seeds and oil to the bowl and mix thoroughly.
