- Cube the potatos, cut the cauliflower into bite-sized florets, thinly slice the onions and chop the tomatoes.
- Over medium heat, fry the cauliflower for 2-3 minutes.
- Add the potatoes, turn down the heat to medium-low and fry for 7-8 minutes. Set aside on some kitchen roll.
- Add some more oil and add the cumin and onions, cook for 2 minutes.
- Add the ginger-garlic paste and cook for another 2 minutes.
- Add the tomatoes and cook for another 2 minutes.
- Add the turmeric, chilli flakes, coriander and mango. Cover the pan and cook for another 2-3 minutes.
- Add the potatoes, cauliflower, garam masala and cilantro and cook for 5-6 minutes.
- Season with salt, cover and cook for another 6-7 minutes or untill the potatoes and cauliflower are fork-tender. Ad some water if the mixture is sticking to the pan.
- Serve with rice or naan.
