- Preheat the oven to 200°C and bring a pot of water to the boil.
1 aubergine • 1 onion • 200g cherry tomatoes
Cut the aubergine into bite-sized chunks, roughly dice the onion and halve the tomatoes2tbsp olive oil • salt, pepper
Tip everything into a roasting tray, season with salt and pepper and toss with the olive oil. Bake for 15 minutes.150g pasta
Cook the pasta to package insturctions.30g pine nuts
5 minutes before the aubergines are ready, scatter over the pine nuts and continue to bake.- Mix the pasta and veg and serve.
