  • 30 g cashews
  • 250 g cabbage
  • 100 g rice noodles
  • 1 tbsp miso
  • 2 limes
  • 2 tbsp sesame oil
  • 3 tbsp water

  1. 30g cashews
    Over medium heat, dry-roast the cashews for 2-3 minutes. Roughly chop and set aside. Use the pot to bring a pot of water to the boil.
  2. 250g cabbage
    Meanwhile, thinly slice the cabbage.
  3. 100g rice noodles • 1tbsp miso • 2 limes • 2tbsp sesame oil • 3tbsp water
    Cook the noodles to package instructions. Meanwhile, mix the miso, juice and zest of the limes, sesame oil and water.
  4. Toss the noodles, cabbage, dressing and nuts together and serve.
