Drain the banana blossoms, grate the ginger and garlic, peel and cube the potato and finely chop the chilies.2tsp oil • 2 bay leaves • 1/2tsp cumin seeds
Over low heat, heat the oil until smoking. Add the bay leaves. cumin seeds, ginger an garlic and sautee for 30 seconds.1/2tsp chili flakes • salt • 1/4 cup water
Add the potato, chili powder, salt and water and cook for 5-7 minutes, until the potato is done.1/2tsp sugar
Add the banana blossom and sugar, cover and cook for 2 minutes.1/4 cup shredded coconut • 1/4tsp turmeric • 1/4tsp garam masala
Add the shredded coconut, chilies, turmeric and garam masala. Season to taste.- Serve with rice and ghee.
