- Preheat the oven to 180°C.
1 lemon • 2tbsp coconut oil
Juice and zest the lemon and melt the coconut oil.80g oats • 80g wholegrain flour • 1,5tsp baking powder • 1/4tsp salt • 50g brown sugar
Combine all the dry ingredients.1 lemon • 1 egg • 2tbsp coconut oil • 1tsp vanilla extract
Add in the wet ingredients and thoroughly mix everything.- Divide into 12 balls, place on a parchment lined baking sheet and flatten.
- Bake for 12-15 minutes or until slight golden brown.
- Transfer to a wire rack and allow to cool.
