- 1kg potatoesPeel, quarter and slice the potatoes and cook until fork tender.
- 1 onionFinely chop the onions.
- 500ml vegetable stock • 10tbsp vinegar • 10tbsp oil • 1tsp mustard • 1 pinch sugar • salt, pepperMix the rest of the ingredients into a dressing and mix with the still warm cooked potatoes and onions.
- Refrigerate for at least 1 hour.
