  • 15 cardamom pods
  • 4 cinnamon sticks
  • 12 cloves
  • 1 tbsp black peppercorns
  • 1/4 tsp nutmeg
  • 1/4 cup sugar
  • 45 g ginger
  • 1/2 cup loose leaf black tea
  • 950 ml water
  1. Toast the spices until fragrant and chop the ginger.
  2. Add the water, ginger and sugar to the spices, bring to a simmer and let steep for 10 minutes.
  3. Remove from the heat, add the tea and let steep for 4-5 minutes.
  4. Let cool down completely and transfer to a bottle.
