- Drain the peaches, set aside the juice in a bowl.
- Cut one peach into wedges and blend the rest.
- Mix the mascarpone, quark, sugar and 2 tablespoons of the peach juice.
- Whip the cream and fold into the quark mixture.
- Put the cookies in a plastic bag and crumble them with a rolling pin.
- In high glasses, alternately layer the cookie clumbles, cream and peach puree. Garnish with the peach wedges.
