- Seperate the eggs. Whisk the egg whites to stiff peaks.
- In a seperate bowl, combine the egg yolks, buttermilk and melted butter. Mix well.
- Whisk in the flour, baking powder, baking soda, sugar and salt.
- Fold in the egg whites.
- Heat a little butter or oil over medium heat. Put in two tablespoons of the batter and fry until fluffy and golden brown (approx. 2 minutes per side).
