  • 2 eggs
  • 240 ml buttermilk
  • 30 g butter melted
  • 175 g flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  1. Seperate the eggs. Whisk the egg whites to stiff peaks.
  2. In a seperate bowl, combine the egg yolks, buttermilk and melted butter. Mix well.
  3. Whisk in the flour, baking powder, baking soda, sugar and salt.
  4. Fold in the egg whites.
  5. Heat a little butter or oil over medium heat. Put in two tablespoons of the batter and fry until fluffy and golden brown (approx. 2 minutes per side).
