  • 2 potatoes
  • 1 cauliflower
  • 1 onion
  • 2 tomatoes
  • 1/2 tsp cumin
  • 1 1/2 tsp ginger-garlic paste
  • 1/2 tsp turmeric
  • 1/2 tsp mango powder or 1-2 tbsp fresh/frozen mango
  • 1/4 tsp chili flakes
  • 1/4 tsp garam masala
  • 1 tsp cilantro
  • 1 tsp coriander powder
  1. Cube the potatos, cut the cauliflower into bite-sized florets, thinly slice the onions and chop the tomatoes.
  2. Over medium heat, fry the cauliflower for 2-3 minutes.
  3. Add the potatoes, turn down the heat to medium-low and fry for 7-8 minutes. Set aside on some kitchen roll.
  4. Add some more oil and add the cumin and onions, cook for 2 minutes.
  5. Add the ginger-garlic paste and cook for another 2 minutes.
  6. Add the tomatoes and cook for another 2 minutes.
  7. Add the turmeric, chilli flakes, coriander and mango. Cover the pan and cook for another 2-3 minutes.
  8. Add the potatoes, cauliflower, garam masala and cilantro and cook for 5-6 minutes.
  9. Season with salt, cover and cook for another 6-7 minutes or untill the potatoes and cauliflower are fork-tender. Ad some water if the mixture is sticking to the pan.
  10. Serve with rice or naan.
