  • 1 aubergine
  • 1 onion
  • 200 g cherry tomatoes
  • 2 tbsp olive oil
  • 150 g pasta
  • 30 g pine nuts or cashews
  1. Preheat the oven to 200°C and bring a pot of water to the boil.
  2. 1 aubergine • 1 onion • 200g cherry tomatoes
    Cut the aubergine into bite-sized chunks, roughly dice the onion and halve the tomatoes
  3. 2tbsp olive oil • salt, pepper
    Tip everything into a roasting tray, season with salt and pepper and toss with the olive oil. Bake for 15 minutes.
  4. 150g pasta
    Cook the pasta to package insturctions.
  5. 30g pine nuts
    5 minutes before the aubergines are ready, scatter over the pine nuts and continue to bake.
  6. Mix the pasta and veg and serve.
