  • 1 beetroot
  • 1 apple
  • 200 g feta
  • 1/2 lemon
  • 1 cup quinoa
  • 1/2 tsp honey
  • olive oil
  • 2 handful walnuts
  1. Wash the quinoa and cook in 2 cups of water.
  2. Meanwhile, cube the beetroot, apple and feta.
  3. Juice the lemon and mix the juice with the same amount of olive oil. Add the honey and season to taste.
  4. Mix with the quinoa and dressing and garnish with walnuts.
