  • 2 eggs
  • 150 g sugar
  • 1 orange zest
  • 1 lemon zest
  • 1 pinch salt
  • 1 tbsp vanilla extract
  • 280 g flour
  • 1 tsp baking powder
  • 130 g almonds
  1. Preheat the oven to 180°C.
  2. 2 eggs • 150g sugar • 1 orange (zest) • 1 lemon (zest) • 1 pinch salt • 1tbsp vanilla extract
    Combine the eggs, sugar, zests, salt and vanilla until smooth.
  3. 280g flour • 1tsp baking powder
    Add the flour and baking powder and knead until smooth and uniform.
  4. 130g almonds
    Knead in the almonds until well distributed.
  5. Divide the dough into 2 and roll each portion into a 3cm thick roll.
  6. Place on a parchment-lined baking tray and bake for 16 minutes. The rolls should have expanded and ever so slightly browned.
  7. Take out of the oven and allow to cool for a few minutes before cutting into 2cm thick slices.
  8. Place the slices on the baking sheet and bake for 5-6 minutes, flip and bake for another 5-6 minutes.
  9. Place on a wire rack and allow to cool.
