- Preheat the oven to 180°C.
2 eggs • 150g sugar • 1 orange (zest) • 1 lemon (zest) • 1 pinch salt • 1tbsp vanilla extract
Combine the eggs, sugar, zests, salt and vanilla until smooth.280g flour • 1tsp baking powder
Add the flour and baking powder and knead until smooth and uniform.130g almonds
Knead in the almonds until well distributed.- Divide the dough into 2 and roll each portion into a 3cm thick roll.
- Place on a parchment-lined baking tray and bake for 16 minutes. The rolls should have expanded and ever so slightly browned.
- Take out of the oven and allow to cool for a few minutes before cutting into 2cm thick slices.
- Place the slices on the baking sheet and bake for 5-6 minutes, flip and bake for another 5-6 minutes.
- Place on a wire rack and allow to cool.
