  • 1 kg cauliflower

  • 40 g cheese e.g. parmesan or shredded cheese

Prep if using fresh cauliflower
  1. Preheat the oven to 210┬░C.
  2. Cut the cauliflower into manageable pieces and shred them into a rice-like consistency with a food processor.
  3. Evenly spred the cauliflower on a parchment lined baking sheet and bake for 15 minutes or until the cauliflower is tender.
  4. Transfer the cauliflower into a clean dish towel or cheesecloth and squeese out as much moisture as possible.
Prep if using frozen cauliflower
  1. Completely thaw the cauliflower.
  2. Shred the cauliflower into a rice-like consistency with a food processor.
  3. Transfer the cauliflower into a clean dish towel or cheesecloth and squeese out as much moisture as possible.
Main recipe
  1. Mix the prepped cauliflower, eggs and cheese into a coherent mass. Season to taste.
  2. Spread the mass into a 0,5cm thick layer on a lined baking sheet. Switch the oven to fan mode and bake for 25-30 minutes.
  3. Flip the crust and bake for another 10-15 minutes.
  4. Take the crust out of the oven, add the toppings and bake for another 10-15 minutes,
