  • Spice Mix
  • 100 g cocoa nibs
  • 40 g fennel seeds
  • 15 g ground ginger
  • 4 star anise
  • 1 cinnamon stick
  • 4 g cardamom
  • 4 g pepper berries
  • 1 clove
  • 18 g ground nutmeg
  • Brownies
  • 4 eggs
  • 125 g brown sugar
  • 100 g sugar
  • 150 g butter
  • 200 g dark chocolate
  • 15 ml hazelnut oil
  • 40 g flour
  • 2 tsp spice mix
  • 100 macadamia nuts
  • 1 tbsp cocoa nibs
Spice Mix
  1. Lightly roast all ingredients until fragrant. Let cool down completely.
  2. Grind everything into a powder. If necessary, sieve and grind the coarse rest again.
Brownies
  1. Pre-heat the oven to 170┬░C.
  2. Whisk the eggs until foamy. Gradually add the sugar and whisk for 10 minutes.
  3. Gradually add the oil until an emulsion forms.
  4. Melt the chocolate and butter in a double boiler. Let the mixture cool down slightly and gradually mix it into the eggs.
  5. Stir in the flour and spice mix, then the nuts.
  6. Pour into a brownie pan (ideally 30x25cm) and bake for 30-35 minutes.
