  • 200 g flour
  • 20 g unsweetened cocoa
  • 20 g sugar
  • 1 pinch salt
  • 5 g baking powder
  • 80 g butter cold
  • 2 egg yolks seperate
  • 80 g milk
  • 80 g chocolate chips
  1. Combine the flour, cocoa powder, sugar, salt and baking powder and mix well.
  2. Cube the butter and work it into the dry mix with your finger tips until breadcrumby and no clumps of butter remain.
  3. Add the milk and 1 egg yolk and mix.
  4. Lightly mix in the chocolate chips.
  5. Shape the dough into squares, halve and layer the halves on top of each other. Repeat 2 times.
  6. Wrap in cling film and refrigerate for 1 hour.
  7. Pre-heat the oven to 180┬░C.
  8. Roll out the dough to 3-4cm thickness and cut into the desired shapes. Transfer to a parchment lined baking sheet.
  9. Whisk together 1 egg yolk and a bit of milk and brish the scones with the mixture.
  10. Bake for 20 minutes. Transfer to a wire rack and allow to cool completely.
