  • 110 g heavy cream
  • 25 g unsweetened cocoa
  • 600 g milk
  • 40 g sugar
  • 30 g cornstarch or 3x the amount in rice flour
  • 150 g dark chocolate
  1. Warm up the cream over medium heat. Meanwhile, chop the chocolate.
  2. Add the milk and sugar and sift in the cocoa powder and cornstarch.
  3. Stir until thick. Add the chocolate and stir until the chocolate is completely melted.
  4. Pass through a fine-mesh strainer and portion into bowls.
  5. Cover with cling film and refrigerate for at least 3 hours.
