  • 200 g beef or seitan
  • 1 onion
  • 200 ml dashi
  • 3 tbsp mirin
  • 3 tbsp soy sauce
  • 1/2 tbsp sugar
  • 1 1/2 rice cooker cups rice
  • 2 eggs
  • 1 spring onion
  • pickled red ginger
  1. Thinly slice the beef or saitan. Slice the onions and spring onions. Rinse and cook the rice. Bring a pot of water to a boil.
  2. In a pan or wok, combine the dashi, soy sauce, mirin and sugar and bring to a boil.
  3. Add the onions and let simmer until they turn slightly translucent, about 2 minutes.
  4. Add the eggs to the pot of water and soft-boil them, about 6 minutes. Alternatively, poach them for about 4 minutes.
  5. Meanwhile, add the beef or seitan to the sauce and let simmer for another 5-10 minutes (until the beef isa done, if using seitan 4-5 minutes are enough).
  6. To serve, add the rice to bowls, top with the beef & sauce, then with the eggs, pickled ginger and spring onions.
