  • 350 g margarine
  • 350 g flour
  • 350 g sugar
  • 1 packet vanilla sugar
  • 2 tsp baking powder
  • 6 eggs
  • 3 lemons
  • 300 g powdered sugar
  1. Pre-heat the oven to 180┬░C.
  2. Juice the lemons.
  3. Combine the eggs and sugar and whisk until foamy.
  4. Gradually add the flour, baking powder, most of the lemon juice and margarine. Mix into a smooth batter.
  5. Pour the batter into a parchment lined loaf tin, level the top and bake for 40-50 minutes or until a toothpick comes out clean.
  6. Mix the powdered sugar and the rest of the lemon juice into a thick glaze. Poke some holes into the cake and spread the glaze.
