  • 80 g oats
  • 80 g wholegrain flour
  • 1,5 tsp baking powder
  • 1/4 tsp salt
  • 50 g brown sugar
  • 2 tbsp coconut oil or butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1 lemon
  1. Preheat the oven to 180°C.
  2. 1 lemon • 2tbsp coconut oil
    Juice and zest the lemon and melt the coconut oil.
  3. 80g oats • 80g wholegrain flour • 1,5tsp baking powder • 1/4tsp salt • 50g brown sugar
    Combine all the dry ingredients.
  4. 1 lemon • 1 egg • 2tbsp coconut oil • 1tsp vanilla extract
    Add in the wet ingredients and thoroughly mix everything.
  5. Divide into 12 balls, place on a parchment lined baking sheet and flatten.
  6. Bake for 12-15 minutes or until slight golden brown.
  7. Transfer to a wire rack and allow to cool.
