  • 2,5 cups oats
  • 1/4 cup brown sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup coconut oil melted
  • 2 tbsp flax seeds
  • 6 tbsp water
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 6 dates
  • 1/3 cups walnuts
  1. 2tbsp flax seeds • 6tbsp water
    Finely grind the flax seeds, mix with water and set aside for 10 minutes. Preheat the oven to 180°C.
  2. 6 dates • 1/3 cup walnuts • 1 cup oats
    Chop the walnuts and dates. Grind 1 cup of the oats into a fine flour.
  3. 1/4 cup brown sugar • 1tsp baking soda • 1/4tsp salt • 1tsp cinnamon • 1/4 cup coconut oil • 1/4 cup maple syrup • 1tsp vanilla extract
    Combine all ingredients and mix into a coherent mass. If the mix is too dry and crumbly, add a bit more coconut oil and maple syrup.
  4. Shape into 20 balls, put on a lined baking sheet and press flat to ~0.5cm thickness.
  5. Bake for 10-15 minutes or until golden brown. Allow to set for a bit on the tray, then transfer to a wire rack to cool completely.
