  • 113 g rice noodles dry
  • 1 shallot large
  • 4 cloves garlic
  • 1 tsp ginger
  • 2 eggs
  • 1 block tofu
  • 1 spring onion

  • 3 tbsp fish sauce
  • 3 tbsp rice wine vinegar
  • 3 tbsp brown sugar
  • 1 tsp soy sauce
  1. Cook the noodles according to the package directions (slightly undercook them). Meanwhile, chop the shallot, garlic and ginger.
  2. Whisk together the 2 eggs with a pinch of salt.
  3. Whisk together the sauce ingredients.
  4. Press and cube the tofu and generously dust in salt, pepper and rice flour or corn starch. Fry until crispy and golden brown.
  5. Over medium heat, saute the onions, garlic and ginger until golden and fragrant.
  6. Add the eggs, scramble them and break them apart into little bits. Allow to brown a little while combining them with the shallots.
  7. Add the nootles and fry for 3-4 minutes while stirring constantly.
  8. Add the sauce and cook for a minute. Add the tofu, peanuts, spring onions and lime juice and stir until combined.
