- Cook the noodles according to the package directions (slightly undercook them). Meanwhile, chop the shallot, garlic and ginger.
- Whisk together the 2 eggs with a pinch of salt.
- Whisk together the sauce ingredients.
- Press and cube the tofu and generously dust in salt, pepper and rice flour or corn starch. Fry until crispy and golden brown.
- Over medium heat, saute the onions, garlic and ginger until golden and fragrant.
- Add the eggs, scramble them and break them apart into little bits. Allow to brown a little while combining them with the shallots.
- Add the nootles and fry for 3-4 minutes while stirring constantly.
- Add the sauce and cook for a minute. Add the tofu, peanuts, spring onions and lime juice and stir until combined.
