  • 1 kg potatoes
  • 1 onion
  • 500 ml vegetable stock
  • 10 tbsp vinegar
  • 10 tbsp oil
  • 1 tsp mustard
  • 1 pinch sugar

  1. 1kg potatoes
    Peel, quarter and slice the potatoes and cook until fork tender.
  2. 1 onion
    Finely chop the onions.
  3. 500ml vegetable stock • 10tbsp vinegar • 10tbsp oil • 1tsp mustard • 1 pinch sugar • salt, pepper
    Mix the rest of the ingredients into a dressing and mix with the still warm cooked potatoes and onions.
  4. Refrigerate for at least 1 hour.
