- Cut the kimchi into bite-sized pieces. Slice the tofu, onion and spring onion.
- Combine everything but the tofu and some spring onion for garnish in a pot. Cover and let simmer over medium-high heat for 10 minutes.
- Layer the tofu on top and let simmer for an additional 10 to 15 minutes.
- Garnish with spring onion and serve with rice.
