550g water • 7g dry yeast • 1tsp sugar
Mix water, yeast and sugar until combined.400g Type 00 flour • 350g flour • 1tsp salt • 2tbsp olive oil
Mix in the rest of the ingredients and knead for 10-15 minutes or until it passes the window pane test.- Cover and proof for 1 hour or until doubled in volume.
- Divide the dough into 2 pieces, shape into long loaves and transfer to a parchment lined baking tray.
- Cover and let rest for 20-30 minutes while preheating the oven and a bowl of water to 250°C.
- Spray the loaves with water and bake for 20-25 minutes while spraying water into the oven 2-3 times.
- Transfer to a wire rack and let cool completely.
