  • 160 g beef brisket or seitan
  • 2 tbsp mirin
  • black pepper
  • 3 1/2 cups rice water from rinsing rice
  • 3 tbsp doenjang
  • 1 tbsp ssamjang
  • 2 tsp gochugaru
  • 1 tsp minced garlic
  • 100 g potatoes
  • 90 g zucchini
  • 35 g onions
  • 100 g enoki mushrooms
  • 45 g shiitake mushrooms
  • 1 block tofu
  • 20 g spring onions
  • 2-3 chillies
  1. Slice the meat as thinly as possible and mix with the mirin and pepper. Thinly slice the potatoes, zucchini, onions, chillies, spring onions and shiitake musrooms. Separate the enoki mushrooms and cut the tofu into rectangles.
  2. Brown the meat over medium high heat. Ad the potatoes and stir for about 2 minutes.
  3. Add the rice water and bring to a boil. Add and dissolve the pastes and garlic.
  4. When the water is boiling, add the zucchini and onions and boil for 1 minute.
  5. Add the mushrooms and tofu, boil for another minute, then add the spring onions and chillies and boil for another minute.
  6. Serve with rice.
