  • 550 g water
  • 7 g dry yeast
  • 1 tsp sugar
  • 400 g Type 00 flour
  • 350 g flour
  • 1 tbsp salt
  • 2 tbsp olive oil
  1. 550g water • 7g dry yeast • 1tsp sugar
    Mix water, yeast and sugar until combined.
  2. 400g Type 00 flour • 350g flour • 1tsp salt • 2tbsp olive oil
    Mix in the rest of the ingredients and knead for 10-15 minutes or until it passes the window pane test.
  3. Cover and proof for 1 hour or until doubled in volume.
  4. Divide the dough into 2 pieces, shape into long loaves and transfer to a parchment lined baking tray.
  5. Cover and let rest for 20-30 minutes while preheating the oven and a bowl of water to 250°C.
  6. Spray the loaves with water and bake for 20-25 minutes while spraying water into the oven 2-3 times.
  7. Transfer to a wire rack and let cool completely.
