  • 65 g flour
  • 20 g powdered sugar
  • 20 g ground almonds
  • 1 pinch salt
  • 50 g butter cold

Refrigerate or freeze the cut cubes before baking to reduce spread.

  1. 65g flour • 20g powdered sugar • 20g ground almonds • 1 pinch salt • 8g matcha or 10g konggaru or 10g ground black sesame
    Mix all the dry ingredients in a food processor.
  2. 50g butter
    Cube the butter and add it to the dry mixture. Process until a dough comes together.
  3. Roll out to a ~1cm thick rectangle between some cling film and refrigerate for at least 1 hour.
  4. Preheat the oven to 150°C.
  5. Cut the dough into cubes, set on a parchment-lined baking sheet and bake for 30 minutes.
