  • 450 g kimchi
  • 1/4 cup kimchi brine
  • 1 package tofu
  • 3 spring onions
  • 1 onion
  • 1 tsp salt
  • 2 tsp sugar
  • 2 tsp gochu-garu
  • 1 tbsp gochujang
  • 1 tsp sesame oil
  • 2 cups stock
  1. Cut the kimchi into bite-sized pieces. Slice the tofu, onion and spring onion.
  2. Combine everything but the tofu and some spring onion for garnish in a pot. Cover and let simmer over medium-high heat for 10 minutes.
  3. Layer the tofu on top and let simmer for an additional 10 to 15 minutes.
  4. Garnish with spring onion and serve with rice.
