- Cut the chicken into bite-sized stripes and marinate in the soy sauce.
- Meanwhile, cut the pak choi and mushrooms into bite-sized pieces and chop the cashews.
- Fry the chicken until golden brown. Add ginger and garlic and saute for 2 minutes. Deglaze with sake and let it cook down. Add mirin and transfer into a bowl.
- Saute the pak choi and mushrooms in a bit of butter. Add the chicken, cashews and cream. Season to taste.
