  • 200 g wholegrain spelt flour
  • 70 g peanut butter or other nut butter
  • 80 g applesauce
  • 5 g psyllium husks
  • 50 g date sugar or a mix of brown sugar & date syrup
  • 30 g water cold
  • 1 pinch salt
  • Filling
  • 370 g apples
  • 250 g applesauce
  • 40 g date sugar or a mix of brown sugar & date syrup
  • 30 g cornstarch
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 pinch salt
  1. Preheat oven to 170°C.
  2. 200g spelt flour • 70g peanut putter • 80g applesauce • 5g psyllium husks • 50g date sugar • 30g water • 1 pinch salt
    Combine all the base ingredients and knead into a coherent dough. Add a bit more water if the dough is too dry to combine.
  3. Set aside 100g of the dough to make streusel. Press the rest of the dough into a greased or lined round baking tin.
  4. 370g apples
    Peel, core and cube the apples.
  5. 250g applesauce • 40g date sugar • 30g cornstarch • 1tsp vanilla • 1tsp cinnamon • 1 pinch salt
    Combine the apples with the rest of the filling ingredients and pour the filling into the base.
  6. Mix the set aside dough with additional cinnamon and rip into small chunks; decorate the pie with these. Optionally garnish with more apple and date sugar.
  7. Bake for 45 minutes, then allow to cool.
